  • One small bell pepper, diced
  • One medium-sized potato, peeled and diced

  • Two tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as dill or parsley) for garnish

Method

  1. Preheat your oven to 180°C (350°F).
  2. Heat one tablespoon of olive oil in a non-stick oven-safe skillet over medium heat. Add the diced onion, bell pepper, and potato to the skillet.
