Ingredients:

  • 1/2 baguette or similar-sized white bread – use 12 thin slices
    1 clove garlic
  • 200 grams Organic Smoked Irish Salmon
  • 2 medium tomatoes
  • 1/4 red onion
  • 1 tablespoon fresh basil leaves, finely chopped (approximately 4 leaves)
  • 2 teaspoons extra virgin olive oil, plus extra for drizzling
  • 2 teaspoons lime juice
  • Salt and pepper to taste

Method

  • Toast the slices of bread until they are slightly browned but not overly toasted.
  • Remove the skin from the garlic clove and rub the cut end gently over the slices of bread to impart a subtle garlic flavour.
  • Chop the smoked salmon, tomatoes, and red onion into small dice, ensuring you remove the seeds from the tomatoes as you go.
  • Finely chop the basil leaves and mix them with the diced salmon, tomatoes, and onion in a small bowl.
  • Add the olive oil, lime juice, and season with salt and pepper to taste. Gently mix to combine all the flavours.
  • Spoon the salmon-tomato mixture onto the toasted bread slices.
  • Drizzle a little extra olive oil over the top for added flavour and a touch of elegance.
